
ROAST RED ONION, ORANGE & SWEET PEPPER SOUP
(This makes about 12 portions)
Three red onions
Three potatoes
Head of celery
4 oranges
two red, two green sweet peppers
Cloves of garlic to taste
Vegetable stock
Up to 2 tablespoons sugar (to taste)
half pack of butter
METHOD
Halve onions & roast in oven
Chop celery, peppers, garlic, potatoes.
Fry off in pan with butter until peppers are soft
A
dd onions, & chopped orangesAdd sugar & seasoning to taste
Add enough stock to cover vegetables, bring to boil,
boil steadily for 20/30 minutes until cooked
Liquidize until smooth
Taste again & season
